ChocolateAvocadoPudding-1024x7682 Large peeled and pitted Avocados
½ cup of unsweetened raw organic cocoa (I like the brand Harmonic Arts)
1/3 cup of almond milk
2 tablespoons of vanilla extract
1 pinch of cinnamon
1/3 cup maple syrup or green stevia
Mix all ingredients together in a high-speed blender (vitamix). Let pudding chill in fridge for 30 min. Then serve, add almonds, walnuts, blueberries, dried cranberries, coconut flakes (optional). It tastes pretty delicious on its own, without having to add any fruit or nuts. However the texture and the crunch of the nuts make it a little more satisfying! My sister Shana could not figure out how I made the fudge so quickly and that it tastes so good. This recipe takes less than 5 minutes to make and when you tell people its made from avocados they will be shocked!
