The Health benefits of Kombucha Tea?

This tea has been around for thousands of years! This fermented, fabulous drink, may give you that extra kick you need! I make my own Kombucha at home which is easy to do and a great energy tonic.

Here is what you need:

1 large Mason Jar (2 litre)
1 cup of white organic sugar
4 black organic tea bags
½ cup of Kombucha starter from previous batch
1 Kombucha SCOBY (Symbiotic Culture of Bacteria and Yeast)
*If you do not have a SCOBY you can buy a Kombucha drink at whole foods, drink 3 quarters of it, and pour the rest into a small glass jar. Cover the top of the glass jar with a cloth or paper towel and seal it with an elastic band. Let it sit for about 2 weeks in a dark place. In about 2 weeks time a baby SCOBY will appear!

Directions:

kombucha-150x150To start place your clean filtered water into a pot and let it boil. Once it has boiled pour the sugar into the pot, mix it around and let it dissolve. Remove the water from the heat and add the 4 tea bags. Allow the tea bags to steep, until the water is FULLY cooled. Transfer the water from the pot into your Mason Jar and Add the Kombucha starter from previous batch (if you have)

Seal the top of the Mason jar with a cloth or paper towel with an elastic band wrapped around the top. Place the jar in a dark, clean warm place and let it sit for 10-12 days.

What will happen in those 10-12 days?

Within those 10-12 days a new “daughter” will grow on top of the original Scoby. When the tea is done it contains less than 1% of caffeine and sugar. The sugar is transformed into gluceronic acid, which is found only in the liver and Kombucha Tea. This Tea is a lacto-acid fermented, which acts as an energetic tonic and natural probiotic. Through the fermentation process vitamin B12, B6, B3, B1, enzymes, and amino acids are Born!

What to do when the tea is ready?

Remove the Scoby from the Mason jar and put into a separate smaller jar. Take ½ cup of the kombucha tea and pour into the same jar as the Scoby and store in the fridge.This liquid you will be use as a starter for your next batch. Place the Mason jar with your newly Fermented Kombucha Tea into the fridge and drink whenever!

I like drinking it before a workout or on a hot summers day. Make sure when you make your first batch only start with 1 ounce. It can be a little hard on your system if you have never had before. Enjoy!
